Our Cafe staff and people who use our wellbeing service regularly create delicious cakes for our customers in our cafe.

Making cakes, and baking is very therapeutic, and is just one way our wellbeing service helps people suffering mental ill health to manage their health better as well as gaining really useful skills and experience to use in the comunity.

This week, N.H made these zingy Coconut and Lime loaf cakes, which are really tasty!

We are so pleased with them, that we wanted to share the recipe with you to try at home. If you would rather just do the eating part, our cafe team have fresh cakes always readily available, and go great with a warm cup of tea.

Ingredients

Cake

8oz /225g self raising flour

2oz / 60g coconut

Zest  of 1 lime

8oz / 225g caster sugar

4 ½ oz 125g melted butter

2 eggs, beaten

200mls coconut milk

1 tsp coconut essence

Butter Cream

3½oz / 100g unsalted butter, softened

7oz / 200g icing sugar, sifted

2 tbsp milk

Lime Zest

Method

 1. Preheat oven to 165c (325F)

2.     Butter and line a loaf tin.

3.     Add all of the ingredients into the mixer, with a paddle attachment, mix on medium speed until all combined.

4.     Pour the mixture into the loaf tin and smooth down with the back of a spoon.

5.     Bake for 45 minutes in the oven until golden brown and spring back when gently pressed.

6.     Turn out onto a cooling rack and remove the parchment paper.

7.     While the cakes cool make the icing.

8.     Beat together the butter and icing sugar until light and fluffy. Slowly add the milk and Lime and beat for 5 minutes.

9.     When cakes have cooled spread a layer of Butter Cream on the top of the cake and sprinkle with a little lime zest.
